Mee Maggi Goreng Mamak by Sheila Rusly

I want to share a simple recipe which I tried cooking for my family and tested, and we all loved it! “Mee Goreng Mamak” is a specific stir-fried noodles dish commonly found at Mamak eateries in Singapore and Malaysia. Mee Goreng mamak usually uses soft medium sized egg noodles (yellow noodles) but the originator version, she substitute with maggi noodle! Seriously, it’s so sedap!

Recipe : Mee Maggi Goreng Mamak (recipe credit to originator)

Ingredients :

  • 2 pkt maggi curry
  • 1 bulb onion – sliced
  • 4 green chilli padi – bruised
  • 1 pkt maggi curry seasoning
  • 3 tbsp chilli paste (depending on your preference)
  • Chye Sim (depending to your preference)
  • 100 – 150 ml water
  • 2 eggs
  • Fried chicken or mid-wing chicken
  • 3 tbsp cooking oil
  • Scallion – for garnishing

Note : Stir and simmer 2 packets of maggi noodle for 1 min or until the noodles are soft, and chewy. This step is more like poaching the noodles so please don’t overcook the noodles. Poach the noodle in the boiling water for 1 min, pour all the noodles out into a colander and rinse the noodle in cold water to stop the cooking process.

In a medium pan, heat up the oil over medium heat and add the onions, fry for 1 min.

Add in the chilli paste and fry until the mixture is a little dry.

Add chilli padi, maggi curry seasoning, water and fry until the mixture is cooked.

Add in the chicken, chye sim and stir for a little bit and add the eggs (one at a time) and break the eggs nicely. Fry for another 5 mins or until the eggs are cooked.

Once the mixture of eggs, chye sim and chicken is a little dry, add in the noodle. Lower the heat and mix well until all ingredients are combined.

Garnish with scallions and makan uolls!
