Chicken Belado (indonesian sambal chilli sauce) Sambal Hijau Minang

It’s 25th day of Ramadan. For tonight’s iftar, I decided to whip up simple dishes for the kids.

  • Chicken Belado Sambal Hijau
  • Stir-fried “Di Huang Miao” (Malabar Spinach) or also known as “Emperor Sprouts”.
  • Omelette

This versatile Indonesian sambal belado is good as a condiment to many other Indonesian recipes and now you can make it without much fuss with this easy recipe.

What is Sambal Belado?

Sambal Belado is native to the Padang (Minang) cuisine in West Sumatra, which means “with chilli”. Lado means chilli in the Minang dialect. While typical sambal is usually served as a condiment on the side, belado is usually cooked with other food to make for example Ayam Belado (chicken belado), Sambal Terong Belado (eggplant belado), Telur Belado (egg belado), Udang Belado (shrimp belado), Cumi Belado (squid belado), Dendeng Belado (usually made with beef), etc. Pretty much anything!

How traditional sambal is made?

Before the food processor and blender came into contact with human’s life, a mortar and pestle (ulekan) are used to make sambal, which gives it’s coarse rustic texture and look. The older generations believe that sambal made with ulekan tastes better but I made my sambal with a food processor most of the time (lazy mommy’s problem!)

  • Recipe : Chicken Belado Sambal Hijau

Ingredients :

  • 2 medium onion (finely sliced)
  • 1 large lime juice
  • 8 green chilli
  • 8 green bird’s eye chilli
  • 10 cloves shallots
  • 5 cloves garlic
  • Whole chicken – cut 10 pieces (marinate with turmeric and half fried)
  • 1 tbsp Maggi all-in-one seasoning

Note : In a food processor, blend green chilli, bird’s eye chilli, shallots and garlics.

In a medium pan, heat up the oil over medium heat and half fried the chicken – put aside.

Using the same oil, add the sliced onions and fry for about 2 mins.

Add in the blended green chilli, bird’s eye chilli, shallots and garlic. Fry till the mixture is a little dry.

Add lime juice, maggi all-in-one seasoning. Stir for another 2 minutes before adding in the chicke and let it cook at a medium heat for about 10 mins.

  • Recipe : Stir-fried “Di Huang Miao” or also known as “Emperor Sprouts”

Ingredients :

  • 1 packet “Di Huang Miao” or “Malabar Spinach”
  • 200 gm shrimps – deshelled
  • 7 cloves garlic – chopped
  • 1 tbsp oyster sauce

In a medium pan, heat up oil and fry garlic for 2 mins.

Add shrimps and fry for another 2-3 mins before adding in the oyster sauce, add 1/4 tsp salt.

Let it fry for another 1 min, add “di huang miao”. Do not overcook the greens. It should be lightly blanced, to remain crunchy.

Serve it hot with basmati rice or brown rice, and omelette if you like.
