Basil Pesto with Spinach Noodle

Hi uolls,

My husband loves his basil pesto with spinach noodle. So I usually keep bottles of Barilla Pesto Alla Genovese and spinach noodles in the kitchen cabinet just in case if he have late nights “cravings”. Every time he have impromptu request, I just have to blanced the spinach noodle with hot water and lightly cook the Pesto Alla Genovese Barilla then it’s ready to season the noodle, throw in some fresh shrimps and baby spinach (or asparagus), and he’s ready to take his first bite! This recipe is so simple and you can fix a meal in 20 mins! And this is one of those rare “lazy to cook” day recipe. You have no idea how many bottled sauces, boxes of pastas and steamed noodles I have in my kitchen cabinet haha…anyway, basil pesto goes well with linguine, egg pappardelle. You may want to try with other pasta too. My favourite basil pesto is Barilla’s, it’s gluten free, soy free and egg free.

Recipe : Basil Pesto to Spinach Noodle

Ingredients :

  • 190gm Barilla Pesto Alla Genovese
  • 1 tbsp chopped garlic
  • 200-300gm fresh shrimps – deshelled
  • 1 cup asparagus – cut into 1.5 inch length (or baby spinach)
  • Spinach noodle – blanced in hot water and drain
  • 1 tbsp olive oil

In a medium pan, heat up olive oil over low-medium heat, fry garlic for 1-2 mins.

Add in pesto sauce, saute for 1-2 mins and add shrimps. Let it sit in for another 5 mins before adding asparagus and spinach noodle.

** You can add in chopped bird’s eye chilli (chilli padi) for some spice.

Cook for another 2-3 mins, best not to overcook the noodle and asparagus.

Just a few steps and you are ready to serve (topped with chilli flakes for more spicy kicks!)
