Lontong Goreng (Fried Rice Cake)

Few days ago I made some “lontong goreng” and only had time to put this up today. Another easy 1 dish meal recipe, another personal favorite of mine. This is made with lontong (compressed rice cake) and flavored with blended chilli, onion, sauces and beef, also seafood if you prefer.

A versatile dish, it can adapted to suit your preference. For instance the add in of vegetables can be beansprouts, cabbage, chye sim or bok choy. But today’s recipe, I add in baby chye sim. You can also opt for shrimps, minced beef/chicken or sliced fishcakes or even sliced beef instead of chicken.

Also the best thing you can make out of leftover ketupats or lontong. And the best recipe for that would be the lontong goreng, which is fried compressed rice cake. Lontong goreng is suitable to serve as breakfast or for lunch as well.

Recipe : Lontong Goreng (Fried Rice Cake)

Ingredients :

  • 2 lontong (batang daun pisang) – cut into small cubes (compressed rice cake in the form of a cylinder wrapped inside a banana leaf, you can get this at any supermarket)
  • 2 cubes beef stock
  • 150 gm chilli paste (you may add more chilli paste if you love to add more spice to your lontong goreng)
  • 100 – 150 gm baby chye sim (or your choice of vegetables)
  • 250 gm beef – boiled and sliced
  • 200 gm minced beef/or chicken
  • 100 gm small fishballs
  • 100 gm crabmeats
  • 3 tbsp dark sauce

Paste :

  • 3 medium onions
  • 9 cloves shallots
  • 8 cloves garlics

Note : In a food processor, blend PASTE ingredients to a fine paste.

In a large pan, heat up the cooking oil and add in the PASTE and fry for 2 mins before adding in the chilli paste.

Once the paste is a little dry and cooked, add the minced beef/or chicken, add beef cubes and add dark sauce.

Next step is to add in beef stock (i love my lontong goreng with more sauce) and stir for awhile more. Then add in the sliced beef, once the beef is tender add fishballs, vegetables and cook for 5-10 mins until the sauce is slightly dry. (again as usual do not overcook the greens and keep it crunchy)

Final step, add in the lontong and crabmeats. Stir to distribute/combine the sauce well. Dish it out and serve it hot.

So this is what we had for iftar many nights ago. This recipe is worth trying.
