Asam Pedas Ikan Pari

This is one of my favorite dish. Asam Pedas Ikan Pari (Stingray) with toasted coconut paste! When it comes to my favorite seafood asam pedas, I can never refuse Asam Pedas Ikan Pari, or sour and spicy stingray curry. More spicy, more shiok and I love it extra spicy so it’s double shiok!

A classic Malay or Minangkabau dish, Asam Pedas is popular in Malacca. Asam Pedas is tangy, spicy, appetizing and best served with rice.

Recipe :

  • 6 pieces medium cut stingray
  • 1 bulb onion – sliced
  • 5 pieces kaffir leaves lime
  • 1 lemongrass – bruised
  • 100 gm toasted coconut paste (kelapa kerisik)
  • 1 tomato – cut into wedges
  • 5 lady fingers
  • 2 handful laksa leaves (vietnamese coriander)
  • 50 ml tamarind juice
  • 100-150 ml water
  • 1 ginger torch flower (optional)

Paste :

  • 10-15 gm shrimp paste
  • 40 dried chillies
  • 1.5 bulb garlics
  • 20 shallots
  • 1 lemongrass
  • 1 tumeric
  • 1.5 inch ginger
  • 1 tbsp coriander seeds
  • 1 tbsp fennel seeds
  • 1 tbsp cumin seeds
  • 1 tsp black pepper seeds

Note : In a food processor, blend PASTE ingredients to a fine paste.

In a medium pot, heat up the oil over medium heat.

Add lemongrass, sliced onions and kaffir lime leaves.

Add PASTE and fry until the mixture is dry/cooked. Once the paste is a little dry and cooked, add in the toasted coconut paste and fry till the paste turns color.

Add in tamarind juice and add in water. Cover and let it boil then lower the heat for about 20 mins before adding in the stingrays.

Stir occasionally until the asam pedas gravy is cooked through. Then add in the lady’s fingers, tomatoes and vietnamese coriander.

Then lower the heat and let it simmer. Once it’s cooked. Serve it hot with white rice. Or you can eat it with baguette. So shiok and sedap!
